M’hancha (Moroccan pastry)


Ingredients (6 people):

250 Gr of almond powder + 10 gr for decoration
125 grams of sugar
80 grams of soft butter
1 teaspoon cinnamon
3 tablespoons of orange blossom
4 Bread leaves (pastilla)
1 Egg yolk
150 Gr of homemade honey


Preheat the oven to 180 °.

Mix the almond powder with the sugar, 40 gr of butter, cinnamon and orange blossom water to obtain a homogeneous stuffing.

Divide this stuffing into 4 and form 4 rolls the size of the pastilla.

Melt the remaining 40 grams of butter in the microwave (5 seconds in defrost mode) and brush your pastry sheets with.

Place the stuffing pudding on the pastry sheet and wrap it with it. Try to pack as much as possible to avoid having an air gap between the pastilla and the stuffing. Do the same with the rest of the stuffing.

Brush each pudding with egg yolk and put them on your baking sheet or

on the oven rack lined with parchment paper. Bake 10 minutes.

Warm the homemade honey to soften it a little.

As soon as you leave the oven and use a pastry brush (if you do not use the sopalin), brush the M’hancha with some warm honey and sprinkle with almond powder. Let cool before cutting.

(If you prefer to use honey from our friends bees, do not worry, make warm your honey and add 2 or 3 tbsp of orange blossom!)
