Moroccan fish tajine baked


INGREDIENTS (6 people) :

  • A beautiful 3kg fish (wolf, pageot …) 1kg of potatoes
  • 1/2 kg of carrots
  • 1kg of tomatoes
  • 3 green peppers cut into slices
  • 1 lemon cut in slices
  • Some olives
  • Chermoula or marinade:
  • A bouquet of chopped coriander
  • 4 crushed garlic cloves.
  • 2 cases of sweet pepper
  • 1 case of caraway
  • Hot pepper
  • 2 cases of oil
  • Juice of a lemo
  • salt pepper

Preparation :

1 / Prepare the chermoula or marinade: mix all the ingredients.

2 / Wash and empty the fish well; Tear it off if you want to keep it whole or cut it into pieces (which I did). Marinate it in the chermoula for at least 1 hour.

3 / Cut the potatoes into thin slices; Carrots in slices.

4 / Place in a baking dish a first layer of carrot slices and potato slices. Place the marinated fish pieces on top.

5 / Cut the tomatoes into slices without peeling (keep the juice that escapes). Arrange them on the fish with slices of peppers and lemon and olives.

6 / Pour the rest of the chermoula and tomato juice on the whole. Add a little oil. In a terrine mix: chopped garlic cloves, salt, pepper, tomato paste, cumin, chopped parsley and coriander, vinegar and olive oil.

7 / Season with salt and pepper. Bake for 40 minutes while watering the fish from time to time.
Good tasting.
