INGREDIENTS (6 people) :

  • 3 tablespoons of olive oil
  • 3 leeks
  • 1 onion
  • 3 Turnips
  • 1 Fresh bay leaf from my garden then dried
  • 6 carrots
  • 5 potatoes
  • Coarse salt
  • Pepper
  • Water
  • 30 to 40 gr of sweet butter


1 / Peel an onion and slice it finely. Book.

2 / Cut the 3/4 of the leek green so as to keep only the white of the latter with a little green. Clean the underwater and cut it in slices of 5 mm and reserve

3 / In a cast iron casserole, put the olive oil to heat over medium heat (4) Add the chopped onion and leeks cut. Mix with a wooden spoon very regularly until the onions begin to become translucent.

4 / Meanwhile, peel the turnips and cut into 8 pieces.

5 / Add the turnips in the pan and mix for 1 to 2 minutes then add 150 ml of water and mix again.

6 / Peel and cut the carrots into 5 mm slices and add them to the casserole with a bay leaf sauce.

7 / Add the salt of guerande and the pepper.

8 / Wash, peel and cut the potatoes in four and put them in the casserole.

9 / Wet with water up to height and cover.

10 / Let simmer over low heat for 2 hours / 2 hours 30 minutes mixing very regularly.

11 / Spend the soup with your robot -mixer, add the butter and mix.

12 / Season with a pinch of salt and serve your WINTER SOUP!
